Tartar sauce was named for the tartar people of Mongolia, it is not a traditional tartar recipe.  The word tatar comes from the Turkic people who came to Mongolia during the 5th Century AD.  The dish we use with tartar sauce is fish but, modern recipes for tartar sauce is simply a mix of mayonaise,  chopped onions, scallions and a mix of spicy herbs.  There are many variations on the recipe for tartar sauce today.
