Chimichurri Sauce by David Antonacci

Although there are several stories of where Chimichurri originated from, the most popular one is an Englishman named Jimmy Curry, from the 19th century was the first person to make the sauce. It is a very popular sauce in Argentina, but has also become well know in other areas of the world. It is most commonly used on grilled meats and chorizo. The ingredients for chimichurri are very simple:

  • 1/2 cup of olive  oil
  • 2 t of fresh lemon juice
  • 1/3 cup of freshly minced parsley
  • 1 clove of garlic, minced
  • 2 finely chopped shallots
  • 1 t of basil, thyme and oregano (or all together)
  • 1 t of paprika
  • salt and pepper to taste

You combine all of the ingredients in a mixing bowl and let rest for at least 2 hours. You may also add vinegar to enhance the flavor, if you choose to. Once it has rested you can grill your favorite meats and pour over and enjoy. You could if you wanted to, buy it in a bottle or dehydrated, but whats the point of going to culinary school if your going to buy it. Then again, whats the point of even looking at these blogs if your going to buy it as well.
