Sauce Solferino is a sauce made from the juice of very ripe tomatoes that has been reduced to a thick syrupy consistency. Melted meat glaze, cayenne pepper, and lemon juice is added to this along with butter and tarragon.

This sauce is often used to accompany grilled meats.

Sauce Solferino has its roots in Lombardy. It was served to high ranking soldiers in the village of Capriana during the battle of Solferino – hence its name.
