The first week of March, we produced a seven course Scandinavian degustation! It was fabulous. Not just for me either. It gave our students a chance to experience dishes that would normally not be seen in our curriculum. All in all it was a great experience for both the guests and the students. We also had a couple from Norway come for dinner. They were both impressed not only with the traditional uses of product but also the modern interpretations of classic dishes.
